Most baked goods are better when the word funfetti is involved. Whether it’s epic funfetti sugar cookie nachos or funfetti cake balls, combining sprinkles with dough is the best thing you can do for you and your party guests. Although, a party is definitely not required. And because we love you and want to give you the gift of childhood as a somewhat-matured adult, we took funfetti culture to the next level and combined sprinkles with churros. Enter, funfetti churros. Get the pot (no, not that kind) and the multi-colored confectionary sugar out, because you’re about to have a fiesta and birthday party in your mouth.

Pour 1 cup of the sprinkles in a sealable plastic bag and crush them with a rolling pin. In a shallow dish, stir together the granulated sugar and crushed sprinkles. Set aside.
In a bowl, whisk together the flour, baking powder, and salt.
Bring the water to a boil in a large pot.
Add the flour mix, vegetable oil, and vanilla extract to the boiling water.
Stir until a thick dough forms.
Let the dough cool for 10 minutes before adding the remaining 1/2 cup of sprinkles.
#SpoonTip: This is a good time to bring the frying oil to temperature. Test the oil by adding in small balls of dough. If it bubbles and browns, it’s ready.
Transfer the dough to a pastry bag fitted with a star tip.
To pipe the churros, hold the bag vertically just above the oil and squeeze out a 5-inch strand. Slowly begin to dip the bottom of the churro in the oil, and, using greased scissors, cut off the strand near the tip and lay the churro flat. Pipe 4 or 5 churros at a time, so the pot does not get overcrowded.
Fry the churros at 350°F for 3-4 minutes, until they become golden brown and crisp.
Take out the churros with a kitchen spider and let drain on a paper towel-lined tray.
While still warm and a little greasy, coat the churros in the sprinkle sugar mix.
Serve with chocolate sauce for dipping.
