Who Needs a Campfire When You Can Make Chocolate Chip S’mores Cookies?

I’m a sucker for good chocolate chip cookies—homemade, chewy, sweet, with loads of chocolate. But that can get a little boring time after time, which is where Pinterest comes in handy. There are so many different variations on chocolate chip cookies across the internet, it can be hard signaling out the best. Enter chocolate chip s’mores cookies.

This variation happens to include graham crackers, marshmallows, and chocolate bars, aka s’mores. The dough is made with graham cracker crumbs, and mini marshmallows and chopped Hershey’s bars are placed on top for just enough time to let them melt to perfection.

  1. Preheat the oven to 375°F and line several cookie sheets with parchment paper.

    In a large bowl, beat the butter together with the granulated sugar, brown sugar, vanilla extract, and eggs. Mix well.

    Add all of the flour, graham cracker crumbs, baking soda, and salt and mix well.

    Mix in the mini chocolate chips with a rubber spatula.

    Roll about 1 1/2 tablespoons of dough into balls and place on prepared baking sheets. Bake in the preheated oven for about 8 minutes, or until just undercooked.

    Remove the underbaked cookies from the oven and place a chopped Hershey’s bar and some mini marshmallows on top. Place back in the oven and bake for another 2-3 minutes, or until the marshmallow and chocolate have slightly melted. Serve and enjoy!
