Vegan Banana Chia Breakfast Muffins

These vegan banana chia breakfast muffins are the perfect go-to! Not only are they packed with nutrients, but these muffins will keep you full and able to focus on what's most important! 

Vegan Banana Nut Chia Seed Muffins

Ingredients
  • 2 tablespoons chia seeds mixed with 1/3 cup water
  • 1/2 cup coconut oil melted
  • 1/3 cup maple syrup
  • 2 ripe bananas mashed
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • a pinch salt
  • 1 teaspoon cinnamon plus more for sprinkling on top
  • 1/2 cup water
  • 1 cup rolled oats optional extra for sprinkling on tops muffins
  • 1 cup whole wheat flour
  • 1/2 cup chopped cashews

Preheat the oven to 375° and line a muffin pan with liners

Mix together the chia seeds and water, then set aside to set up
