Vegan Banana Chia Breakfast Muffins
Many college students have such hectic schedules that they forget to eat breakfast! The solution to this is to take some time on a Sunday and prepare something that you can take on the go all week! These vegan banana chia breakfast muffins are the perfect go-to! Not only are they packed with nutrients, but these muffins will keep you full and able to focus on what's most important!
Vegan Banana Nut Chia Seed Muffins

Ingredients
- 2 tablespoons chia seeds mixed with 1/3 cup water
- 1/2 cup coconut oil melted
- 1/3 cup maple syrup
- 2 ripe bananas mashed
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- a pinch salt
- 1 teaspoon cinnamon plus more for sprinkling on top
- 1/2 cup water
- 1 cup rolled oats optional extra for sprinkling on tops muffins
- 1 cup whole wheat flour
- 1/2 cup chopped cashews
Step 1
Preheat the oven to 375° and line a muffin pan with liners
Step 2
Mix together the chia seeds and water, then set aside to set up
Step 3
Mix together the melted coconut oil and maple syrup
Step 4
Add the bananas and the chia seed mixture, mix well until combined
Step 5
Add baking soda, baking powder, salt, cinnamon and water, then mix until combined
Step 6
Mix the oats and flour together and add in the cashews
Step 7
Pour the batter into the lined muffin pan
Step 8
Bake for 20-25 minutes or until toothpick inserted in the center of the muffins comes out clean
Now you have breakfast for the week and you can freeze some to save for later! The ultimate breakfast treat!
