Vegan Banana Nut Chia Seed Muffins

- 2 tablespoons chia seeds mixed with 1/3 cup water
- 1/2 cup coconut oil melted
- 1/3 cup maple syrup
- 2 ripe bananas mashed
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- a pinch salt
- 1 teaspoon cinnamon plus more for sprinkling on top
- 1/2 cup water
- 1 cup rolled oats optional extra for sprinkling on tops muffins
- 1 cup whole wheat flour
- 1/2 cup chopped cashews
