- In a medium pot over medium-high heat, boil the potatoes in salted water until fork-tender, about 20 minutes. Drain the water and mash the potatoes. Add the milk and butter and continue to mash until the butter is mashed and the potatoes are lump-free. Add salt and pepper to taste.
- In a large skillet over medium-high heat, fry the bacon until crisp, then remove and set aside. Pour all but 1 to 2 tbsp of the grease out of the pan. Add the onion and sauté until translucent and just barely golden, about 5 minutes, then add the mushrooms and continue to sauté until the mushrooms are tender and golden, about 7 minutes. Season with salt.
- To serve, transfer the mashed potatoes to a serving dish and top with the mushrooms and onions. Sprinkle the bacon over this, followed by the green onions and parsley. Serve with pickled beets on the side.
