Ahhhh, Valentine’s Day. If the love in the air or the pink and red decorations don’t get you in the holiday spirit, then at least the smell of chocolate will. Nothing screams Valentine’s Day like chocolate hearts, chocolate fondue, and chocolate covered strawberries. But, why wait until after dinner for that special treat? Well, with these vegan, granola, banana ice cream sandwiches, you and your bae can indulge this Valentine’s Day morning, too.
Breakfast Ice Cream Sandwiches

Instructions
Drop all of your granola ingredients (everything besides chocolate chips, bananas, and strawberries) into a food processor or high-power blender.
Pulse slowly until mixture just begins to combine and stick together.
Remove from blender and stir in chocolate chips.
Spread mixture evenly into a small baking dish and bake at 350°F for 10-15 minutes, until it’s toasted to touch. Let cool and cut out with your fave cookie cutter (obviously, heart shapes work best).
While your bars are cooling, blend frozen bananas and strawberries in blender or food processor until smooth (stopping when it looks like ice cream).
#SpoonTip: If it’s breaking up in the blender rather than combining, add a few splashes of almond milk and continue pulsing.
Spread ice cream onto half of your granola bar cut-outs, and sandwich the other half on top. Freeze for at least an hour for the sandwiches to firm up, and wait for your boo to wake up. Enjoy your delicious, healthy V-Day breakfast together.
