Nothing beats chocolate chip cookie dough. But, what if I told you it was possible to make it just a touch better (and healthier) than how it already is? That’s right, you heard me. These nutty chocolate chip cookie dough energy bites are portable, customizable, and give you a boost of energy. With these mighty bites being vegan, gluten-free, and absent of added sugars – they’re practically for anyone and any occasion.

I’m not the biggest fan of dates, but with their natural sweetness, they are the perfect base for this snack. Roll these in coconut flakes or cocoa powder for an extra oomph, and you are ready to hit the gym or power up your brain to start your homework (ugh).

    Soak dates in warm water for at least 20 minutes.

    Drain dates, and pulse them in the food processor 10-15 times, until they form a thick paste.

    Add oats, flour, nut butter, maple syrup, and water into the food processor. Once you blend the ingredients, the texture should be a bit grainy and less sticky.

  4. Stir in the chocolate chips.

    Roll the dough into tablespoon-size bites, and put onto a parchment paper-lined baking sheet. Set them in the freezer for 30 minutes.
