This Easy Vegan Avocado Pesto Tastes Good on Anything

Face it: your meal plan is no longer freshman gold status, you have gained a few pounds from stress and crappy college food, and you miss your mom's homemade pesto pasta

This is where investing in a Magic Bullet becomes the greatest decision you’d make since ditching bottom eyeliner and taking selfies with a duck face.

Here is a super simple, five-ingredient recipe for vegan avocado pesto to toss on plain boiled pasta of any kind.

Vegan Pesto

Ingredients
  • 1 avocado
  • 1 handful fresh basil leaves
  • 1-2 cloves garlic peeled and pressed
  • 1/4 cup shelled and unsalted sunflower seeds
  • 1 1/2 tablespoon olive oil

Step 1

Gather ingredients.

Spoon out 1 avocado and put into the magic bullet cup.

Step 3

Peel and squish 1 clove of garlic (put two if you don’t plan on kissing anybody that night) into the cup with the avocado.

Step 4

Add in ¼ cup of shelled and unsalted sunflower seeds. Pesto is traditionally made with pine nuts (pignolias), however, sunflower seeds are easier to find, less expensive, and add a super smooth richness when blended up.

Step 5

Add in 1 ½ tablespoons of olive oil, for consistency and flavor.

Step 6

Add looted salt and pepper from your cafeteria to taste.
