Here is a super simple, five-ingredient recipe for vegan avocado pesto to toss on plain boiled pasta of any kind.

    Gather ingredients.

  2. Spoon out 1 avocado and put into the magic bullet cup.

  3. Peel and squish 1 clove of garlic (put two if you don’t plan on kissing anybody that night) into the cup with the avocado.

  4. Add in ¼ cup of shelled and unsalted sunflower seeds. Pesto is traditionally made with pine nuts (pignolias), however, sunflower seeds are easier to find, less expensive, and add a super smooth richness when blended up.

  5. Add in 1 ½ tablespoons of olive oil, for consistency and flavor.

    Add looted salt and pepper from your cafeteria to taste.
