Melt chocolate chips in the microwave. Add corn flakes to the bowl and stir until coated. Place on wax paper to harden.
Add cream to a large bowl and whip with a mixer for about 5 minutes, or until thick and fluffy. Add sweetened condensed milk and vanilla to the whipped cream.
Add chocolate-coated corn flakes and caramel to the whipped cream.
Pour ice cream mixture into a container. Freeze for approximately 5 hours, or until hard.
