Avocado toast is probably one of the most basic foods to date, alongside pumpkin spice lattes and kale salads. I mean, this simple (and delicious) avocado-on-bread craze has sprung up everywhere – from NYC to LA.

But people, it’s time for an upgrade. Don’t get me wrong, I am an avid lover of avocado toast – I even have a whole Instagram dedicated to it. But sometimes you just have to break away from the basic-ness and embrace the unconventional.

And that’s where ricotta toast comes in.

Yup, ricotta cheese on toast. Some of you may have already heard of it, maybe even tried it. Rest assured, the flavor combinations are endless, and I have a few recipes that will have you saying bye-bye to avocados forever (or at least until you crave some guac).

Pesto, Tomato & Balsamic Ricotta Toast
