Breakfast is the most important meal of the day, whether you are an athlete headed to practice, a student going to class, or an adult on the way to work.
Last fall, I was looking for something small, but satisfying to eat along with my coffee every morning, but every time I looked around the grocery store, I was disappointed to find only sugar- packed muffins. This inspired me to search for a muffin recipe that was just as delicious as a store-bought muffin, but also had enough protein and nutrients to keep me feeling satisfied through the morning.
These muffins, adapted from Popsugar’s Low-Sugar, High-Protein Lemon Blueberry Protein Muffins recipe, are an easy way to make a nutritious, grab-and-go breakfast for a busy morning.
