These Peanut Butter S’mores Bars Will Make You Forget About the Campfire

Do you ever think, “I could really go for a s’more right now”? Me too. So, instead of waiting for a nice summer day to break out the bonfire, make these irresistible s’mores bars that include my favorite food: peanut butter. While this seems like an unlikely combo, the peanut butter lends the perfect bit of saltiness to the super sweet marshmallows and chocolate, creating a perfectly balanced and super delicious treat.

    Preheat the oven to 350°F. Crush the graham crackers into crumbs, and mix with the brown sugar, salt, and melted butter. Press the crust into a 9-inch square pan and place in the oven for 8 to 10 minutes, or until lightly brown.

    While the crust is in the oven, add the peanut butter, softened butter, and confectioner’s sugar to a large bowl. Mix until the sugar is fully incorporated and the mixture is creamy.

    Once the crust has come out of the oven and cooled down, press the peanut butter mixture over it. Use your hands to make the layer as even as possible. Place into the fridge to set.

    While the bars are in the fridge, put a pot of water on the stove and bring it up to a simmer. Add a heat safe bowl on top of the pot. Make sure the water isn’t touching the bowl. Add the chocolate chips to the bowl, along with the heavy cream, and stir until the mixture is fully melted. Once melted, take off the heat.

    Take the bars out of the fridge, and pour the chocolate ganache over the peanut butter layer. Smooth it out to create an even layer. Place the bars back into the fridge for about 5 minutes to cool down once again.

    After 5 minutes, take the bars out of the fridge and top with the marshmallows. Set your oven to broil, and place the bars into the oven for about 1 minute, or until the marshmallows are nicely browned.

    Let the bars cool at room temperature for about 10 minutes before slicing.

This super-simple recipe will definitely become one of your go-to cheat day treats. Once you make it, you’ll never go back to a boring store bought dessert. The crispy crust, salty peanut butter, soft chocolate, and gooey marshmallows combine to form a glorious dessert that will please even the most esteemed s’mores aficionado.
