Fall is officially pumpkin season. I don’t know about you, but I have been obsessed with pumpkin and craving it nonstop. I’ve been trying out so many pumpkin recipes all week that I ran out of pumpkin purée and had to go buy more.
Having perfected so many pumpkin recipes, I’m confident that pumpkin pie will be the last fall food on your mind. Although the most popular pumpkin-themed foods fall under the dessert category, I have found a bunch of recipes so that you can eat pumpkin for every meal of the day. And believe me, I have.
Breakfast: Pumpkin Oatmeal Muffins

It is so cozy and delicious, and impossibly easy to make.
Lunch: Parmesan Pumpkin and Spinach Quinoa
IFoodReal’s Parmesan Pumpkin and Spinach Quinoa has been on my list of recipes to try for weeks now because it looks so delicious. I am a huge fan of quinoa because of how great it is for you, how easy it is to cook, and how versatile it is. Definitely check this out if you’re looking for a fun spin on your quinoa salad!
Snack: Pumpkin Protein Bars
Whether you’re stuck studying in the library all day, or need to pack something to hold you over as you run from class to class, you should definitely check out Eating Bird Food’s Pumpkin Protein Bars. Even though I love all these recipes, this one is my personal favorite. I even got my friends obsessed: my housemate has spread the word to more friends because of how good it is. It takes no time at all to prepare, and the recipe makes so much creamy, delicious pasta that it lasted me for ages. Something that I also love about Chocolate Covered Katie’s Pumpkin Mac and Cheese is that it is vegan and allergy friendly!
Dinner: Vegetarian Pumpkin and Kale Pasta Bake
MJ & Hungry Man’s Vegetarian Pumpkin and Kale Pasta Bake is another recipe that is at the top of my list to try. It takes 30 minutes to make and seems like the absolute perfect comfort food for this cold weather that is on its way. When you get home from campus, exhausted and cold from the winds on University Avenue, turn to this recipe for the ideal pick-me-up!
