A Cheapskate Poke Bowl That’s Actually Delicious

Living in a landlocked state like Oklahoma makes finding fresh seafood difficult at times. On top of that, being on a college budget, I can’t always afford sushi-grade ahi tuna at the grocery store. Missing the poke bowl experience from home, I decided that I would make my own. With some slight modifications, I recreated one that is cheap, flavorful, and delicious. Did I mention that it is cheap? This recipe comes out to around three dollars a serving.

    You are going to want to cook your rice. Remember to use the ratio of one part rice to one-and-half parts water when cooking your rice.

    Chop up your cilantro and thinly slice your green onions. Dice up your avocado so that it is in little chunks and mix the tamari, sesame oil, and Sriracha. This will be used to coat the crab meat and veggies.

    Mix the mustard, olive oil, and rice vinegar. You’ll need to stir vigorously in order to mix all the ingredients properly. Then, use this to coat your greens and rice.

    Put your rice and greens mixture in a bowl and put your crab meat and veggie mixture on top. Boom, poke bowl college style!
