These tacos are for anyone looking to change up their tacos and have a epic food experience. Beans are a great way to give your body protein. Not to mention they’re cheaper than most animal proteins and both of the legumes in this recipe contain over 10 grams of fiber per cup.
Beans also easily take on any flavor you mix them with, so if you like spicy add more spicy seasonings. Also, if you blend them right they even have the texture of meat. Add 2 cups of lentils to a pan with 5 cups of water. Boil for 15 minutes then drain the water.
To a blender, add 1 cup of black beans and the drained, cooked lentils. Add in the taco seasoning, garlic powder, onion powder, and cumin. Then pulse and make sure all the seasonings are mixed in.
Load the taco shells, top with toppings, and enjoy!
