Get Cozy With This Burning Love Recipe

The following recipe and excerpt for Burning Love are from “Disney Frozen: The Official Cookbook: A Culinary Journey through Arendelle” by Daytona Danielsen and S. T. Bende. It’s available for purchase on Amazon.

Arendelle’s ice harvesters spend bleakly brisk mornings—and glacial Nordic nights—carving frozen blocks out of the fjords. And while they’re surrounded by unparalleled beauty, from the snow-covered mountains to the dancing northern lights, the icy cold lends a significant element of danger to their awe-inspiring work. After their long day splitting the ice, Burning Love (brennendekjærlighet) would offer the ideal incentive to hurry home for a hearty meal. This creamy dish of mashed potatoes is smothered in toppings that range from crispy bacon to pickled beets. Whether striking the ice for love or fear, Kristoff would certainly agree that Burning Love would make a well-loved staple in any harvester’s home!

Instructions

    How to make the potatoes

  1. In a medium pot over medium-high heat, boil the potatoes in salted water until fork-tender, about 20 minutes. Drain the water and mash the potatoes. Add the milk and butter and continue to mash until the butter is mashed and the potatoes are lump-free. Add salt and pepper to taste.
  2. How to make the topping

  3. In a large skillet over medium-high heat, fry the bacon until crisp, then remove and set aside. Pour all but 1 to 2 tbsp of the grease out of the pan. Add the onion and sauté until translucent and just barely golden, about 5 minutes, then add the mushrooms and continue to sauté until the mushrooms are tender and golden, about 7 minutes. Season with salt.
  4. To serve, transfer the mashed potatoes to a serving dish and top with the mushrooms and onions. Sprinkle the bacon over this, followed by the green onions and parsley. Serve with pickled beets on the side.
