  • 1 1/2 cup edamame
  • 1 egg

Step 1

Spray oil of your choice onto the pan and add in edamame.

After a minute or two, add in riced cauliflower.

Step 3

Cut tempeh into cubes and add to the pan.

Step 4

Crack an egg into the middle of the pan and start to scramble it as it cooks.

Pour in soy sauce, if desired, mix together, and enjoy!

Tuesday: Rice Bowl with Pesto Coated Tempeh

  • 1 cup broccoli

Cook brown rice as directed.

Add desired oil to pan and add in broccoli.

Wednesday: Cauliflower Crust Veggie Pizza
