St. Patrick's Day is a holiday often associated with drinking and all things green and minty.  For example, take McDonald's upgraded Shamrock Shake menu, which combines that wonderfully minty drink with chocolate.  This year with the unicorn theme taking the internet by storm, I've decided to give the colorful trend a holiday upgrade (looking at you unicorn hot chocolate). This St. Patrick's Day hot chocolate is a wonderful balance of chocolate and mint. Plus, you can always kick it up notch by sneaking in extra shot(s) of Bailey's to get you in the spirit.  

Ultimate St. Patrick's Day Hot Chocolate

    Ingredients

  • 1 cup milk
  • 1/4 cup white chocolate chips
  • 3-4 drops green food coloring
  • whipped cream optional
  • sprinkles mini marshmallows for garnish - optional
  • 1 shot Bailey's - optional

  • Step 1

    Gather and set out all ingredients, plus a small sauce pan and wooden spoon.

  • Step 2

    Heat the milk in a sauce pan over low heat.  Stir often and be careful not to let the milk boil.

    Pour in the white chocolate chips and continue stirring until all the chips are melted.

    Mix in the mint extract.  The recipe calls for a 1/4 teaspoon, but more can be added for a stronger mint taste.

    Add in a few drops of green food coloring, for a festive twist.  Three or four drops will give you a nice, mint green color, but add more for desired color!

    Remove from heat and pour into glass.  Add a shot of Bailey's if you're in the St. Paddy's spirit, and garnish with sprinkles, marshmallows, whipped cream, or whatever you're heart desires.

For a simplified version, throw the milk and chocolate into the microwave, heating in 30 second intervals.  Make sure to stir between each round and keep an eye on the milk - you don't want it to boil. 

Serve this up for all your friends to kick off all your St. Patrick's Day festivities.  Trust us, you won't regret it.
