It is well into November, the pumpkins are gone and every store from Starbucks to Walmart has embraced Christmas vibes. Yet fall is still here until December 21 so fear not, we don’t have to let go of pumpkin flavours just yet.
If you have just 10 minutes of spare time for dinner, as is often the case, pull out a can of pumpkin puree and your grilled cheese staples, and you have yourself a “gourmet” dinner with this recipe.
Pumpkin Grilled Cheese

Warm up the tablespoon of butter or oil in a hot frying pan.
Fry the onion until they start to become translucent.
Mix the fried onion, cream cheese, pumpkin puree and spices together in a bowl.
Add the shredded cheese to the bowl and mix it with the puree mixture.
Butter one side of both slices of bread, this is the key to good grilled cheese. Spread the puree mixture onto a non-buttered side of the bread, you can also spread on cranberry sauce if you’re feeling extra fancy.
Put the sandwich into the hot pan buttered side down.
Fry until golden brown on both sides and oozing cheese (or until you can’t wait anymore).
Fry the sage in a buttered pan if you are using it.
Cut in half and enjoy it with your favourite sitcom, or scarf it down like I did (it was just too good).
