Freshman year, when I realized dorms don’t come with fully stocked kitchens, things took a turn for the worse. I longed for the appliances to be able to cook my own meals creatively. Fast forward three years and I am living off campus with my own kitchen, but I rarely have the time and energy to break out the pots and pans. Enter the microwave, the only appliance necessary to create a gourmet three-course meal.

Chocolate Cake in a Mug

Easy

Prep Time: 6.5 minutes
Cook Time: 1.5 minutes
Total Time: 8 minutes

Servings: 1

Ingredients:
1/3 cup flour
4 tablespoons sugar
3 tablespoons unsweetened cocoa powder
1 egg white
3 tablespoons milk
3 tablespoons butter or vegetable oil
¼ teaspoon baking powder
¼ teaspoon vanilla extract
Dash of salt
½ teaspoon cinnamon

Directions:
1. Whisk all ingredients in a mug until smooth.
2. Cook on high until puffed, about 1 ½ minutes.
