Apple Pear Crumble

Craving dessert that isn’t chocolate is a rare occurrence for me, but this crumble brings an entirely new definition to the word “rich.” While the crumble slowly bakes, the hot pears and apples marry together with the agave and cinnamon to form beautiful, syrupy, caramelized goodness. The richness of the filling combined with the crunchy oats on top give this dessert a much needed contrast. The best part is you’d never know it’s dairy, gluten, and almost entirely sugar-free.

Servings: 8

Ingredients: For the filling: 2 Honeycrisp apples 3 pears 1 tablespoon all-purpose flour ½ teaspoon cinnamon ¼ cup agave syrup

For the topping: ¾ cup oats ¼ cup packed light brown sugar 1 tablespoon all-purpose flour 3 tablespoons coconut oil ½ teaspoon salt

Directions: 1. Preheat oven to 325°F. 2. Peel and slice apples and pears, and place into a medium-sized bowl. 3. Add other ingredients for the filling to the apple and pear slices and mix with hands.

4. Lightly grease an 8×8 baking dish with cooking spray. 5. Pour filling into baking dish and smooth out with a spoon to make sure it’s level.

6. In a separate small bowl, combine all ingredients for the topping.

7. Sprinkle topping mixture over filling. 8. Bake for 45 minutes, or until the topping is slightly browned and the filling is bubbling.

9. Serve warm with whipped cream, ice cream or plain.
