Alabama Biscuit Muffins

  • Prep Time:10 minutes
  • Cook Time:20-25 minutes for 12-muffin pan, 30-35 for 6-jumbo-muffin pan
  • Total Time:35-45 minutes
  • Servings:12 muffins or 6 jumbo muffins
  • Easy

    Ingredients

  • 3 3/4 cup all-purpose flour
  • 6 tablespoon granulated sugar
  • 1 tablespoon baking powder
  • 1 1/2 tablespoon kosher salt
  • 1/2 teaspoon baking soda
  • 1 cup unsalted butter, refrigerated and cut into small pieces
  • 1 1/2 cup buttermilk
  • Step 1

Preheat the oven to 350ºF and grease muffin pan. As you can see, I got a little generous with the spraying…

  • Step 2

Using an electric mixer, combine flour, granulated sugar, baking powder, baking soda, and salt on a low speed until evenly blended.

  • Step 3

Adding 1 tablespoon at a time, combine butter into the dry mixture until it is crumbly and with pea-sized pieces throughout.

  • Step 4

Pour buttermilk into dough until moistened. Believe it or not, you don’t want the dough to come together into a ball. Instead, expect to see various sized pieces of butter and moist flour with the dry pieces still visible.

  • Step 5

Using a rubber spatula or spoon, fold over the ingredients from the bottom until further combined. It is not important for the mix to be evenly dispersed. Clumps are welcome.

  • Step 6

Using a large spoon, add the mixture evenly into the individual muffin cups. Top each muffin with a little butter to act as a baste while it bakes (optional).

  • Step 7

Bake for 25-30 minutes. The finished product should be a dark, golden brown with a lumpy texture. Let cool in pan for 5 minutes before removing.
