Friendsgiving is the perfect time to make memories and create new traditions, but between catching up with family and writing that research paper due the day after break, when do you have time to cook and figure out the dish you’re going to bring?
You know that three of your friends are already bringing variations on mashed potatoes, and you’re not about to spend an hour trying to figure out how to julienne cut an onion at this point. That’s when you whip out this vegetable casserole recipe, the perfect, easy comfort food that’s bound to please everyone at your Friendsgiving celebration.
Warning: This recipe is from my grandmother who was born and raised in Americus, Georgia. In other words, she is not afraid of anything creamy and buttery.
Vegetable Casserole

Mix the canned ingredients and the sour cream together in a casserole dish.
Lightly sprinkle half a bag of cheddar cheese on top.
Melt a stick of butter.
Crush a sleeve of Ritz crackers.
Mix the crushed crackers and butter together.
Sprinkle cracker mixture on top of casserole.
Bake at 350°F for 30 minutes. The top will turn a light golden brown. Remove from the oven, let cool for 10 minutes and enjoy!
Think of this dish as your basic green bean casserole‘s cooler, younger brother (no offense to any green bean-lovers out there). It’s an indulgent twist on a classic that will easily impress anyone at your gathering–and despite the butter, you can rest easy knowing that at least there are vegetables in it.
