Watermelon, Feta and Mint Summer Salad

Maybe it’s the fact that we’re in the middle of finals week, and the light of the end of the tunnel is near. Maybe it’s that the St. Louis weather forecast shows sunny skies and temperatures in the mid-80’s every day. Whatever the reason, summer is feeling well within our reach. My stomach rumbles at the thought of all the great foods I can actually have the time to cook now, and I know I’m not alone. Cool down on these hot days with one of my favorites: watermelon, mint and feta salad. With just three ingredients and virtually no prep time, the salad is as easy to make as it is tasty. The watermelon’s sweetness and the feta’s tanginess blend perfectly together, and the mint adds a biting taste to top it all off.

Servings: 2

Ingredients:
2 containers of watermelon cubes (about 8 large cubes)
1 pack of mint leaves (about 5 leaves)
Feta cheese crumbles

Directions:
1. Chop the watermelon cubes into smaller pieces. The size is your choice, and it depends on how big the cubes came in their package.
2. Make the mint leaves into smaller pieces, either by chopping or tearing with your hands.

3. Place the watermelon and feta onto a plate or serving bowl. Sprinkle the feta crumbles over your salad, and voilà!

Tip: jazz the up the salad by adding more ingredients like cucumbers, arugula, olives, or peppers.
