Vegan Chai Protein Cookies with Probiotics

In my opinion, there is nothing better than a good oatmeal cookie. However, cookies aren’t usually vegan or at all filling. The secret ingredient for this recipe is Bob’s Red Mill Chai Protein Powder. With chia seeds and probiotics, this product is so much more than protein powder. It has a strong chai spice flavor, which pairs perfectly with oatmeal cookies. 

Not only are these cookies full of protein and fiber, they’re easy to make and are the perfect way to spice up your traditional oatmeal cookie.

    Cream together the protein powder, Crisco, maple syrup, and coconut milk.

    Mix in the flour, baking powder, baking soda, and figs.

    Slowly add in oats.

    Use a spoon to scoop the batter onto a cookie sheet. Bake at 350°F for 8 minutes until the outside becomes slightly brown and crispy.

In terms of nutrients, these cookies have a lot of the featured protein powder in each bite. This probably equates to about 8g of protein per cookie, which is almost the same amount as most protein bars on the market. The oatmeal added also adds fiber and heart healthy ingredients to each cookie.

The package gives really great ideas for shakes too, but I think the crunch of a cookie with this distinct spicy and sweet flavor makes a treat that is more desirable. Additionally, the cookies are still really healthy.

These protein cookies could even be considered a good breakfast biscuit after a workout at the gym. It has the taste of a cookie paired with the benefits of a protein shake. I love the texture of the chia seeds, oatmeal, and the creamy protein mixture.
