My family typically opts for Easter brunch rather than an Easter dinner but this year our schedules didn’t align for it. We did not have any extra guests and it is only my brother and me, so I found it very challenging to narrow down the menu for minimal food waste. I ended up sticking to the main dish of ham with three sides, bread, and dessert!

I make these potatoes all the time. They are seriously the best and I love everything Scheck Eats puts online.
Roasted Carrots with Pesto
I didn’t follow a set recipe for this side. I cut up the carrots, tossed them in garlic powder and dried rosemary, and roasted them in the oven at 425 for 30 minutes. I used Trader Joes’s vegan kale pesto to top them as well.
Carrot Cake
Carrot cake is my favorite dessert, so I had to make for Easter. This recipe is actually vegan, but you would never know it. I made a traditional cream cheese frosting, though, and everyone loved it!
