Chewy & Dairy-Free Cookie Dough Brownies

This article is written by a student writer from the Spoon University at Wake Forest chapter.

One day, when I couldn’t figure out what would satisfy my intense dessert craving, I decided to make completely dairy free cookie dough brownies, combining my two favorite classic desserts. This dessert is guaranteed to deliver on chocolate flavor with a hint of crispy cookie dough. The two together make a fantastic chewy, yet slightly crisp, dessert that you won’t quickly forget.

To make a few quick shortcuts on this recipe, I used a completely dairy-free Duncan Hines brownie mix.  I made a small batch of chocolate chip cookie dough from scratch. The box mix includes no dairy products on the ingredient list and requires just water, eggs, and oil to be transformed into chewy, chocolatey brownies.

Instructions

  1. Allison Curley

Blend together the boxed brownie mix with the eggs, water, and oil.

  2. Allison Curley

Grease a large rectangular pan and pour in the mixture.

  3. Allison Curley

Use another bowl to mix together the brown sugar, vanilla, Crisco, and white sugar.

#SpoonTip: Using Crisco makes this recipe dairy free.

  4. Allison Curley

Slowly add in the flour, baking soda, and chocolate chips.

#SpoonTip: I used Enjoy Life brand dairy free chocolate chips because of my dairy allergy. These could be replaced with any chocolate chips, but in order to keep this dessert totally dairy free, make sure to buy dairy free chocolate.

  5. Allison Curley

Scoop up the cookie dough and crumble the pieces on top of the brownie mixture.

  6. Allison Curley

Use a spatula to smooth out the surface and mix in the cookie dough a little bit on top of the brownies.

Bake at 350°F for 40 minutes until a toothpick comes out slightly moist, but not wet. Let the dessert cool for about an hour before cutting.

#SpoonTip: Be sure to lightly mix the cookie dough into the brownie batter to keep the brownie-cookies chewy and not puffy.

While the final product may just look like a moist brownie, it is actually so much more than that. The brownie is totally transformed by the flavor and texture of a crispy chocolate chip cookie. The edges are crispy resembling that of a cookie and the center is incredibly chewy and moist. No longer do you have to choose between baked goods.

Dairy-free baking is not always as challenging as many would think. Boxed brownies are an awesome way to whip up a chocolate dessert in a few easy steps. Thanks to Duncan Hines and Enjoy Life, this appeals to dairy-free people too.

Overall, dairy-free diets can absolutely enjoy this kind of decadent treat, even though it traditionally contains multiple forms of dairy. With a few simple modifications, no one will be able to tell the difference between the dairy-laden original and this newly improve dairy free creation.
