Why Avocado Toast is the Food Trend that Never Dies

This article is written by a student writer from the Spoon University at Vassar chapter.

When I first heard of avocado toast, I was definitely on the fence about it. But when this new trend kept appearing on brunch menus and my Facebook feed, I had to cave. After making it a few times, now I get why the entire world is crazed for ‘cado toast. Here are a few reasons why:

It’s Pairs Perfectly with Eggs

Put simply, there’s nothing like a thick spread of avocado with a sunny-side-up egg. You can leave it open-faced, or you can even turn it into an egg sammy if you’re feeling wild. Some ideas to spice up your avocado toast is to add cheese, a sprinkle of red pepper flakes, slice of tomato, dash of balsamic vinegar, crushed nuts, and maybe some smoked salmon (if you’re feeling like a member of the bourgeois).

There’s an Instagram Account Dedicated to it

It’s Actually Good for You

Avocado toast not only tastes fantastic, but it’s a healthy fat that leaves you full and focused. Some of its health benefits include strengthening your bones, clearing your skin, and it can even uplift your mood. Especially when avocado is paired with whole grain toast, which reduces risk for diabetes and limits weight gain, it’s a win-win.

You’ll Never Get Bored

Avocado toast is probably one of the most diverse foods on the planet. Pair it with crumbly cheese, some pico de gallo, squeeze of lime, or keep it in its simplest form. Either way, you can’t really go wrong.

Next time you’re in the mood for some avocado, slather the green goodness on some crunchy toast. You can dress it up, or you can dress it down. There are also the unreal health benefits. Plus, we cant forget that avocado toast doesn’t have a single bad angle in photos.

And after you take that first bite, you’ll keep going back for more.
