You’ve Got to Try these Vegan Desserts this Summer

This article is written by a student writer from the Spoon University at UVM chapter.

It can be hard for many of us to find delicious vegan desserts when going out or buying items in the store but believe me it can be done! Not only are there plenty of easy, packaged options for a girl on the go as well as simple recipes and more complicated dishes to please anyone’s palate.

I’ve complied a short list of some of my favorite desserts I’ve been having this summer and I highly recommend you give some of these a try! They’re organized based of of mood so if you’re craving….

Something Cold: Try Alden’s Organic Dairy Free Frozen Desserts

Vegan desserts
Mackenzie Laverick

These ice cream sandwiches remind me of my childhood and are so tasty! Alden’s Organic Ice Cream sent me several of their dairy free products to try such as this ice cream sammie with flavors including the classic vanilla bean in a soft chocolate cookie as well as fun flavors like key lime and salted caramel drizzle. Needless to say I was very impressed and will be buying these again in the future, yum!

Something Extra: Banana Split with Dairy Free Ice Cream, Coconut Whipped Cream, and Cherries

Top a split banana with a hug scoop of dairy free ice cream, vegan Carmel sauce, coconut whipped cream, crushed roasted peanuts, and a marishino cherry. My favorite brands are Ben and Jerry’s, Alden’s Organic Dairy Free, and Coconut Bliss. If you want another opinion on some great dairy free ice creams check out this article.

Something Fruity: Try these Strawberry Rhubarb Bars

A great summer food, this recipe is on the lighter side and is a great packable snack. You can definitely use the crust recipe as a base and use whatever fruits you want for the filling. Berries are better like raspberries, blueberry, or even huckleberries. Apples and similar frutis work, just avoid softer fruits like bananas and mangos. Bonus points if the fruit is from your garden! Top with some dairy free ice cream or coconut whipped cream if you want to be extra fancy.

Something Quick and Easy: 2 Minute Mug Cakes

This is one of my go-to desserts. It’s quick, easy, and delicious so I’m fully satisfied after eating it. I’ve tried all five of the mug cakes featured above and my favorite is definitely the double chocolate mug cake. I highly recommend giving this recipe a try, or any of the other four, just head over to Pick Up Lime’s webpage for the full thing.

Something Choclatey: Peanut Butter Chocolate Chip Bars

Honestly anything that has peanut butter and chocolate chips in it I’m down for, but these cookie bars are on a whole other level. Get the recipe here or grab a vegan Reese’s bar like Justin’s desserts for a similar effect in much less time. Happy snacking!
