Let’s be honest – summertime is the best time! Since summer is just around the corner, why not get hyped up for it with this tropical vegan piña colada ice cream? It is 100% vegan and guaranteed to get you in the summery vibe. Piña coladas send me straight into my happy place of being on the beach. Pineapple and coconut really are the smells and flavors of summer; this combo can’t be beat! But did you also know that pineapple and coconut offer tons of health benefits!?!?

Benefits of Eating Pineapple

Besides being super yummy and sweet, pineapple has a lot of nutritional benefits that you may not know about. It is very rich in antioxidants, which is important in preventing and slowing down the damage of your body’s cells. Pineapple is also packed with in vitamin C, which helps with reducing illnesses. Pineapple is also very helpful with digestion. 

Benefits of Eating Coconut 

In my personal opinion, tropical fruits truly are one of the best types of fruit, and their nutritional benefits make them even better.  Coconuts are very high in omega-3s, which help reduce inflammation. They are also high in fiber, which helps with digestion. Coconut is sold in many forms, including milk, oil, sugar, butter, shredded, and even water. 

Tips for This Recipe

I used fresh pineapple for this piña colada ice cream, because I think fresh is always best. A good way to tell if a fresh pineapple is ripe is to pull on the leaves. If the leaf comes out easily, the pineapple is ready! If not, give it a few more days to ripen. Also, if you want more coconut flavor in your ice cream, use coconut milk, or add some coconut sweetener to this recipe. I recommend Better Stevia in the flavor coconut if you really love coconut!

Vegan Piña Colada Ice Cream

Prep Time: 10 minutes

Cook Time: 1-2 minutes

Total Time: 11-12 minutes

Serving Size: 1 cup  

Ingredients 

1 cup of fresh or frozen pineapple

1/2 cup of unsweetened almond or coconut milk

1 tablespoon of maple syrup

1/4 cup unsweetened or sweetened shredded coconut

Directions

1. Place the pineapple, almond milk, coconut, and maple syrup in a blender.

2. Blend until the mixture becomes thick.

3. Place in the freezer overnight and enjoy the next day!
