Upgrade Your Tomato Soup With This Leftover Pizza Hack

This article is written by a student writer from the Spoon University at UIUC chapter.

Spoon UIUC teamed up with Food & Wine magazine to increase awareness about the problem of food waste on our campus. With a microgrant of just under $100, we created 10 original recipes to show you how you can transform leftover late-night eats into something equally amazing the next day.

Hi, my name is Shalayne, and I am of the opinion that having a relationship with Pizza Pie is nothing to be ashamed of. In fact, it’s been one of the most rewarding, fulfilling, long-lasting relationships in my life.

While I do support morning-after cold pizza, I’ve been searching for a way to spice up my ‘za. Thankfully, this recipe for crunchy, cheesy pizza croutons has been a game-changer. Drop them in tomato soup for a cozy get-together or toss them into your salad for a more adventurous pairing.

Tag us in your Instagrams to show off how you rekindled the pizza love.

Begin heating the tomato soup and remove the crust from your leftover pizza. Place one slice over the other so the cheese is on the inside. Cut into 1-inch squares as best you can.

Coat a sauté pan with a healthy amount of vegetable oil and fry croutons for about 3 minutes or until the cheese between the slices melts and the bottom crust is golden brown.

Flip each crouton and fry for another 3 minutes or until they are completely golden brown and crunchy.

Drain the croutons on paper towel and toss over tomato soup, salad or snack on them alone.
