You Won’t Feel Guilty After Eating These Chocolate Chip Chickpea Cookies

Well, look no further than this recipe because these chickpea-based chocolate chip cookies are the ultimate combination of sweet and healthy. These chickpea cookies do not contain flour, white sugar or oil. They are also packed with protein and natural sugars that will give you energy and keep you full throughout your day. 

Chocolate Chip Chickpea Cookies

    Preheat the oven to 350°F. Place the chickpeas, chocolate PB-2, baking powder, honey and vanilla extract into a food processor or blender. Note: Do not hand mix.

    Process or blend the ingredients until they are completely smooth. Then stop food processor or blender. Scrape sides and process again to make sure there are no chunks of chickpeas left over. The cookie dough should resemble hummus in consistency.

    Next, pour mixture into a medium size bowl and add in dark chocolate pieces to the cookie base. Then hand mix until the chocolate chips are evenly dispersed.

    With wet hands, form batter into 1 ½ inch balls and place the balls of dough onto parchment paper. If you would like the cookies to resemble “normal cookies,” flatten the balls of dough with the back of a wet spoon. Because the base for the dough is chickpeas, these cookies don’t rise much when baked.

    #SpoonTip: you can use aluminum foil as a substitute for parchment paper.

    Finally, place cookie sheet in oven and bake for 10 to 12 minutes.
