First and foremost, shout out to Ditch the Carbs for sharing this amazing low-carb, Fat Head pizza recipe.
I’ll admit I was beyond hesitant to try out this recipe for two reasons: 1) I don’t cook, and 2) I don’t like the sound of a pizza recipe that skips out on carbs.
We all know that pizza and carbohydrates go together like Blair and Chuck, Kanye and Kim, Ellen and Portia, or [insert your personal favorite couple reference here]. So it goes without saying that it took a hefty amount of persuasion for me to test out this “Holy Grail.” G bless my token healthy friend, who not only convinced me to try it but also changed my life. That’s right — this pizza is a total game changer.
If you’re sticking to a low-carb diet, this recipe is still delicious on its own. If you’re not on such a meal plan though, feel free to add whatever you like, but personally, caprése pizza is the best option.
Low-Carb Pizza

Mix together your shredded cheese, almond flour and cream cheese in a microwavable bowl. Microwave on high for 1 minute. It should have a dough-like texture after doing so. Stir, and then microwave for another 30 seconds.
Add the egg and seasonings to the dough, and stir. Then place the mixture in between two parchment papers and roll into the pizza shape of your choice. If at some point the mixture hardens, pop it back into the microwave for about 20-30 seconds.
Remove the top parchment, and place pizza on a baking sheet. Be sure to keep the bottom parchment paper under the pizza. Cut slits throughout the pizza so that the crust cooks evenly, and bake at 425ºF for 12-14 minutes.
Once it’s removed from the oven, allow the crust to cool for about 3-5 minutes. Now it’s time to have fun with it! Add all the toppings in the world, or just add some extra cheese. It’s up to you. Be sure to place your pizza back in the oven just enough to melt it â no more than 5 minutes.
Remove pizza from the oven, and let it cool for about 3-5 minutes again. Don’t forget to snap a picture of your masterpiece before you dig in.
