A Perfect Sweet Snack

Cottage cheese is the ultimate snack; once again, it is high in protein, low in calories, and deliciously versatile. It keeps you full and satisfied without the extra guilt! Let’s dive into my holy grail for after a good workout: the apple pie. This perfect bowl consists of a diced apple (as small as possible), a serving of cottage cheese, a squeeze of honey, LOTS of cinnamon, and I sprinkle in a dash of my cinnamon sugar mixture.

When it comes to dessert, I know cottage cheese may not be the first ingredient that comes to mind, but it’s the underrated secret hero of this quick and healthy apple pie-inspired treat. This recipe keeps it simple, requiring no baking or complicated steps.

A Scrumptious Breakfast

Mornings can be hectic, but a nourishing breakfast doesn’t have to be complicated. This egg, avocado, and cottage cheese toast is packed with protein, healthy fats, and fiber, making it the perfect choice to power through your day.

You can start by toasting your favorite whole-grain bread while you get the rest of your ingredients together. While toasting, I like to mash up my 1/2 avocado in a bowl with a fork. That way, I can sprinkle in some salt, pepper, and an occasional dash of chili flakes to add a hint of spice. I consider myself an egg enthusiast as well, so I always keep a stash of hard-boiled eggs in my fridge to grab throughout the week. However, it is just as easy to drop one in a pot of boiling water before you get your bread toasted!

Once the bread is all toasted up, I let the slice cool for just a second as I assemble my mixture. I dice up the hard-boiled egg and mix it in with the avocado, probably adding a bit more salt/pepper and chili flakes as I go. For the last touch, I scoop out a generous spoonful of cottage cheese and dump that in; I also squeeze half a lemon in as well because I think it compliments the avocado quite nicely.

Then, I go in with a substantial layer of cinnamon and a dollop of honey; I mix that all together to a golden brown color that looks ready to spread.

The toast jumps up, and it is ready to plate! I spread the mixture from my bowl with a spoon to get an even layer. Then, I carefully place the banana slices and drizzle on some more honey for the final touch!

To no surprise, I pop my everything bagel in the toaster until it is a perfect crisp, letting the seasoning shine. Then, I’ll generously spread the cottage cheese onto each half of the toasted bagel. I really love how the mild tanginess pairs with the savory toppings. Next, I layer thin slices of smoked salmon over the cottage cheese so the smoky flavors complement the creamy base. Once that looks good, finish the bagel off with a burst of salty, briny flavor from the caper. The last step is to brighten it all up with some lemon juice, salt, and pepper.

This offbeat version of bagel and lox is everything you love about the classic but with a healthier twist. It’s creamy, savory, and satisfying without leaving you feeling heavy. Once you try it with cottage cheese, you will never want to go back to cream cheese.
