Baked Potato Mac N’ Cheese Is What Dreams Are Made Of

I love mac n’ cheese and I love baked potatoes. My problem is baked potatoes never fill me up… I eat an hour later. Specifically, I was eating mac n’ cheese when this beautiful idea came to me. I can add all of my favorite baked potato toppings to my mac n’ cheese. Not only will the cheesy goodness fill me, but it will satisfy my baked potato cravings. Thus, baked potato mac n’ cheese was born into society. 

The bacon bits and onion give some crunch to my mac, while the chives and sour cream pizzazz the cheese.

    Bring a small pot of lightly salted water to boil over high heat. Cook macaroni according to the box’s instructions, drain the pasta, and place in a saucepan to mix in the ingredients.

    Melt the butter and whisk flour slowly. Once that thickens, pour in milk slowly. After it’s all dissolved, stir in the cheese until it is all deliciously gooey and melted.

    Add in the amount of chives, bacon bits, onion, and sour cream that you want. Not everyone likes the same amount of these baked potato toppings. Stir it all together for your baked potato mac n’ cheese (minus the potato).
