3 Five-Minute Healthy Cookie Recipes Every Cookie Lover Needs

Whether you prefer chewy or crunchy, or a little bit of both, everyone’s a fan of cookies! There’s no denying how amazing they are. A good cookie can change your life. Okay, maybe not. But it can definitely change your entire mood for the rest of the day. The only issue with cookies is that the homemade ones either take an hour to make or the store-bought ones are super processed.

Like every foodie in the world, I wanted a five minute cookie that was healthy and still tasted amazing. I needed to find five-minute healthy cookie recipes ASAP. And I did. So I have to share this incredible discovery with you, too!

It seemed impossible to me at first. I couldn’t believe a cookie could be made in 5 minutes. But holding onto hope, I searched all over the internet for five minute cookie recipes. After hours of searching, I narrowed down the top 3 best ones I could find. And then I put them to the test: could they really be made in five minutes, were they actually healthy, and did they measure up in flavor to traditional cookies? 

Here are the 3 five-minute cookie recipes:

5 Minute Cookie

Ingredients

Instructions

  1. Melt the butter in the microwave for 30-40 seconds.

  2. Add all remaining ingredients.

  3. Form and place onto a microwave safe plate.

  4. Microwave for 50 second. Enjoy!

This recipe contained mostly traditional cookie ingredients, which can certainly be enjoyed in moderation, but aren’t necessarily the healthiest options. I decided to make some substitutions to make the cookie both vegan and gluten free. Check out the video above for my healthier take on this recipe.

Microwave Oatmeal Cookie

Difficulty:BeginnerPrep time: 3 minutesCook time: 1 minuteTotal time: 4 minutesServings:1 servings

Ingredients

Instructions

  1. Combine all ingredients.

  2. Form and place on a microwave safe plate.

  3. Microwave for 60-75 seconds. Enjoy!

Vegan Cookie Dough

Difficulty:BeginnerPrep time: 5 minutesTotal time: 5 minutesServings:6 servings

Ingredients

Instructions

  1. Drain and rinse chickpeas.

  2. Add all ingredients, except chocolate chips, to a blender or food processor.

  3. Blend until smooth.

  4. Place cookie dough into mixing bowl and combine with chocolate chips.

  5. Enjoy! (Leftovers can be stored for up to 4 days in the refrigerator).

Although this cookie wasn’t cooked within the 5 minutes, it can be eaten just as it is! And cookie dough is on the same level of deliciousness as baked cookies are. So I had to include this recipe because cookie dough under 5 minutes that tastes great: a must have.

The Results and Ratings

After making and trying all 3 five minute cookies, I was amazed to find that they not only could be made in 5 minutes or less, they also tasted fantastic! Some were more delicious than others, however. The first was by far my favorite. Even with all of the healthier substitutions that I made, it still tasted just like a store bought cookie! I was in heaven as soon as I took the first bite.

My second favorite was the Vegan Cookie Dough. I was skeptical at first because cookie dough and chickpeas just didn’t make sense in my mind. But I was shocked to find that the consistency is almost identical. The taste is comparable to a healthier store-bought variety. I had my friends and family try it before I told them what was in it, and they loved it! Apparently chickpeas make an almost perfect cookie dough.

Finally, my last favorite 5 minute cookie was the Microwave Oatmeal Cookie. The taste was good, but I felt it could have been much sweeter. Also, the texture was more cake-like than what is expected of a cookie. But otherwise, it is a great healthy snack when you’re craving a cookie…or small cake.
