Forgot to prepare a dish for brunch? Serving pancake for the masses? I love pancakes but if you’re asking me to watch the stove top and still patiently wait for disks of goodness, I ain’t got no time for that. The prayers for a quick fix for fluffy, soft, warm, golden brown deliciousness have been answered. Here’s a way to cook your baked pancake all in one bowl and under 20 minutes!

    Preheat the oven to 425° F. Spray desired baking dish (I used two 9-inch cake pans) with nonstick spray.

    Add pancake mix, almond milk, and eggs in a medium mixing bowl.

    Mix together (the batter will have small lumps).

  4. Carolyn Ho

    Fold in your optional ingredient. If you have none, pour batter into the baking dish.

    Bake in the oven for about 10-15 minutes or until done (poke the center with a toothpick and have it come out clean).

    Cut to your desired size.

    Serve with syrup and margarine or butter, if desired.

To veganize, use “flax egg”  (1 Tbsp flaxseed meal + 2.5 Tbsp water) instead of egg
