Thanksgiving sides are far too good to have just once a year, so turn those leftovers into delicious and filling snacks. Roll your own combination of leftovers (or one of the options below) into egg rolls and keep them frozen until you’re craving the taste of the holidays.
Try one of these suggested roll combinations (mashed potatoes, yams & green beans; yams & stuffing; mashed potatoes and green beans) or make one of your own.
#SpoonTip: You can also add turkey (and gravy) for those non-vegetarians out there
Thanksgiving Leftovers Egg Rolls
Ingredients
Instructions
Place whichever leftover filling you desire in an inch wide roll diagonally just below the center of the egg roll wrapper.
Place water along bottom corner and fold over filling towards the center.
Place water on right corner and fold inward toward center of the roll.
Place water along left corner and fold inward toward the center of the roll.
Place water along top corner and roll filling tightly towards top corner. Once rolled completely, trace edges with extra water to ensure it is sealed tightly. Place the roll seal side down to endure a tighter seal.
Once all the rolls are finished, place in freezer for 15 mins.
Fill medium pan with about 1/2 inch of vegetable oil and heat on medium high. While oil is heating, warm up cranberry sauce for dipping.
#SpoonTip: For a sweet and savory sauce, mix gravy and cranberry sauce and add a little Sriracha.
Place frozen rolls in oil point side down and let cook for 1 1/2 mins or until golden brown. Flip and cook an additional 1 1/2 minutes or until golden brown.
Serve rolls and dipping sauces together and enjoy!
