Easy Homemade Pumpkin Bread Recipe: The Perfect Fall Snack

If you are in need of a simple Fall recipe for this year’s holiday parties and get-togethers, this pumpkin bread is perfect for you. It’s great for Halloween and Thanksgiving and will be a hit amongst pumpkin lovers and even those who are not huge fans of pumpkin. Or, just bake some for yourself, and you will have a delicious breakfast to pair with a glass of milk or cup of coffee and a tasty snack to take with you to class and work!

    Gather your ingredients and preheat your oven to 350°. For materials, you will also need 1 large mixing bowl, 1 medium bowl, a mixer (hand or standing), and 3 disposable foil loaf pans. I used handi-foil pans with dimensions 20.3 x 9.8 x 6.3 cm.

    Grab a medium sized bowl and combine your dry ingredients (cake flour, baking soda, salt, baking powder, cinnamon, nutmeg, and Allspice). The cake flour is what will make the bread extra fluffy and moist. Gently mix with a large spoon and set this bowl to the side.

    Next, add your wet ingredients to the large bowl: sugar, eggs, oil, pumpkin, water. Start mixing with a large spoon first, then use the electric mixer to ensure all ingredients are combined.

    Combine the contents of your two mixing bowls. Slowly add your dry mix to the large bowl while stirring constantly with a large spoon. Do not add all the dry ingredients at once! Once all the dry mix has been added, you can use the mixer to break up any remaining clumps in your batter.

    Spray some no-stick spray along the inside of your foil pans and divide the batter into your three pans. Fill each pan slightly above halfway.

    Bake in the oven for approximately 1 hour. After a few minutes of baking, your kitchen will start to smell amazing. Check on your bread after about 50 minutes of cook time by inserting a toothpick into the middle of a loaf. If it comes out clean, your pumpkin bread is done!

    Allow the bread to cool for about 15-20 minutes, then slice and enjoy! You can even can customize your bread with a topping like whipped cream, ice cream, or glaze, but it tastes just as delicious on its own. If you are taking these to an event or giving them as a gift, you can add some decorations to the foil pans, like these Halloween stickers from the dollar section at Target!

    *Note: Refrigerate after 3 days of leaving outside at room temperature.
