This is an easy recipie for when you want to make believe it’s thanksgiving, but realize you’re at college. So you can turn a sweet potato into a thanksgiving dish without the intense time commitment or your mom’s expert cooking skills.

The Thanksgiving Sweet Potato

    Rinse and dry a sweet potato.

    Use a fork to poke holes through the potato.

    Cook in the microwave for 10 minutes, or until cooked through and soft.

  4. Cut the sweet potato down the center.

    Mash the insides of the potato with a fork.

    Add mini marshmallows to both sides and microwave for one minute. Sprinkle with cinnamon, and enjoy!
