For those days, these homemade sweet potato fries will more than suffice. You will trick yourself into believing that you’re downing restaurant quality fries while actually eating healthy.
Homemade Sweet Potato Fries

Instructions
Rinse and dry the sweet potato.
Use a fork to polk holes throughout the potato.
Place in the microwave for 8 minutes, or until soft.
Take out and cut into thin circular slices.
Pour olive oil into a pan and sprinkle the pan with salt. Place the sweet potato slices on the pan and sprinkle them with salt.
Cook until crispy (when they get black around the edges they are especially delicious).
