Day 16: Loaded Vegan Oatmeal Raisin Cookies

Everyone loves a classic, warm, chewy oatmeal raisin cookie. You can pretend you’re being healthy because it’s oatmeal and raisins, right? Well, these vegan treats are actually pretty good for you, no need to pretend! Baking vegan cookies sometimes leads to a dense, way too healthy-tasting product. These are reduced in sugar and fat, using less processed ingredients, but I promise you won’t even taste the difference. Go ahead – have two!

Prep Time: 15 minutes
Cook Time: 10-12 minutes
Total Time: About 25 minutes

Servings: About 16 large cookies

Ingredients:
¾ cup whole wheat pastry flour
½ teaspoon baking soda
½ scant teaspoon salt
½ teaspoon cinnamon
⅓ cup brown sugar
6 packets Truvia
2 tablespoons maple syrup
¼ cup apple sauce¼ cup coconut oil
½ teaspoon vanilla
1 ½ cup rolled oats
½ cup raisins
⅓ cups chopped and toasted walnuts
⅓ cup vegan chocolate chips

Directions:

1. Preheat oven to 350°F. Line cookie sheets with aluminum foil.

2. Mix together flour, baking soda, salt and cinnamon.

3. Mix together sugars, maple syrup, apple sauce, oil and vanilla. Add to the flour mixture and stir, then stir in oats, raisins, walnuts and chocolate chips.

4. Let mixture sit for 10 minutes.

5. Drop about a rounded teaspoon for each cookie onto sheet.

6. Bake for about 12 minutes, let cool on sheet for 5 minutes, then move to cool onto a wire rack.
