Lazy Breakfast: Overnight Oats

For most of us, the mornings are all about convenience. How can we eat, get ready and get out the door in the least amount of time possible? Save time and make meals the night before, like these overnight oats.

Overnight oats are especially great heading into these warmer months, since they can be eaten cold. Let your oats soak in milk overnight, then layer them with yogurt and fruit and voila, parfait.

Easy

Prep time: 5 minutes
Cook time: several hours
Servings: 1

Ingredients:
1 cup rolled oats (don’t use steel cut — they won’t absorb right)
1 cup milk
1 cup yogurt (optional)
Fruit, granola, nuts (optional)

Directions:
1. Combine rolled oats and milk in the container of your choosing.
2. Cover and refrigerate overnight.
3. In the morning, layer with toppings of your choice.

Layering combinations: I like blueberry yogurt and granola but you can do lemon yogurt with blueberries, apple yogurt with cinnamon and apple pieces, vanilla yogurt and almonds or ditch the yogurt and eat with a splash of milk.
