How to Make NYC’s Loopy Doopy Prosecco Popsicles at Home

A rooftop bar located on the 16th floor of the Conrad Hotel in New YorkLoopy Doopy has come to fame not only for its unreal views of the Empire State Building, Hudson River, and New York City skyline, but also for its creative cocktails– specifically the Prosecco and Ice Pop cocktail. With a little help from People’s Pops, Loopy Doopy drenches seasonal popsicles in Prosecco or Rose that they keep on tap. 

But this cocktail will put you back $22, so I decided to make a cheaper replica at home. Below are three stellar, alcoholic popsicle recipes that you can easily make at home. First, all the pops start with a base of mint simple syrup.

Mint Simple Syrup

    Combine water and sugar in a microwave safe bowl, and microwave the mixture for 1 minute. Add mint leaves and let sit until desired taste.

1. Peach Blueberry Wine Pops

    Using a mixer or blender (I used an immersion blender) combine peach and syrup until smooth.

    Thinly slice the peach and add 2 slices to mold. Add a couple blueberries to mold as well.

    Pour in peach mixture and top with white wine.

    Freeze overnight or until firm.

2. Blueberry Wine Pops

    Combine blueberries, white wine, and syrup in a mixer and blend until smooth.

3. Strawberry Ros Rosemary Pops

    Slice strawberries and add to mixer with syrup and rosé. Blend until smooth. Add 1-5 rosemary leaves.

    Add to molds and add additional rosemary for garnish. Freeze overnight or until firm.

Once your pops are done, it’s time for the fun part– making your wine pops “loopy.” Take the popsicles out of the molds and transfer them to a wide wine glass. Pop the Prosecco and pour over the ice pops.

So if you can’t make it to NYC this summer (or are not trying to spend $22 on a cocktail), you can now easily make these famous Prosecco pops at home. Feel free to use these recipes as a base and get creative– add in fresh ingredients or whatever you have in your fridge. Just make sure to have fun with it and, of course, get loopy.
