This Chocolate Peanut Butter Fudge Is Actually Healthy for You

I’m always trying to be healthy. I eat my veggies, fruits, and protein. I’ve even tried kale and juice cleanses. But a girl still has to have her chocolate. This healthy fudge is the answer to all my problems. C’mon, isn’t anything with coconut oil and goji berries good for you? There are really no excuses to not make this healthy fudge. First, it has no white sugar or butter. It’s also perfect for college students because all you need is a microwave, fridge, bowl, silverware, and measuring cups — no fancy equipment necessary.

    Measure out the coconut oil and stick it in the microwave for about 30 seconds until it has melted.

    Combine the coconut oil and peanut butter. Really stir until you have a nice smooth texture.

    Add the cocoa powder into the bowl and mix with a fork. Be careful because cocoa powder can get a little messy. I like to put a paper towel under the bowl in case any cocoa powder puffs out.

    Add the agave and honey. If you like your fudge a little sweeter, taste it and add more.

    Fold in the walnuts and raspberries carefully so you don’t smoosh all of the raspberries. You can get creative here. Most nuts and berries will work, so put in whatever you prefer.

    Transfer the fudge from the bowl into a shallow dish and smooth the top until it’s pretty flat.

    Now for the most important step of them all: make your fudge look pretty. I sprinkled some goji berries on top, but you can use other dried fruits, berries, nuts, or nut butters.

    Refrigerate your fudge until it becomes solid– at least an hour and a half. Trust me, the wait is worth it.

Here you go, an entire pan of healthy fudge. Feel free to finish this in one day. Or maybe a couple of hours.
