This Easter bunny cake recipe is kept simple by using a boxed cake mix, but is spiced up with homemade vanilla buttercream frosting. This sweet dessert is also packed with coconut — nut jobs, this one’s for you.

Preheat oven to 350° F and mix box cake as directed by adding eggs, oil, and water.
Grease two 8-inch round cake pans and pour cake mixture into pans. Bake for 28-30 minutes or until cake is golden brown.
Whisk powdered sugar, softened butter, vanilla extract and whipping cream together until thick to make the frosting. Separate frosting into three bowls, keeping one white and dye the others any color you’d like with food coloring.
Once the cake is golden brown, take one of the 8-inch cakes and cut into three sections as directed below. The sides of the cake will serve as the bunny’s ears and the middle will be its bow tie.
Assemble cake and decorate with the three different colored frostings. Top with coconut to appear as fur and some Cadbury eggs for its eyes and nose.
