Three Drool-Worthy Desserts To Satisfy Your Inevitable 10pm Sweet Tooth

Midterm and exam season are well underway, and you know what that means– late nights spent cramming and hoping that the one concept from the textbook you never really understood miraculously doesn’t make it onto the test. Maybe the world of Zoom and Blackboard has pushed you to the edge and you’re choosing to “wing it” because hey, why not? Either way, if you’re like me, that means you may tend to stress eat. Need to snack, but can’t shake the habits that leave you with nothing but regrets after all is said and done? Well, be glad you’re here, because here are three simple desserts to whip up if you’re tired of your go-to pint of Ben and Jerry’s.

Frozen Chocolate Covered Bananas

  1. Slice the bananas into thin slices, arrange them on a lined tray, and place into the freezer for about an hour or until frozen.

  2. Place the chocolate chips and coconut oil into a small microwave-safe bowl. Microwave for about 30 seconds or until the ingredients are fully melted (stir and evaluate if it needs longer as you go). Set the now melted chocolate to the side.

  3. Once the sliced bananas are frozen, take them out of the freezer and fully submerge each slice into the bowl of melted chocolate. Allow any excess chocolate to drip back into the bowl before placing the slices on the lined tray and back into the freezer.

  4. When the chocolate has hardened, enjoy! Keep these stored in the freezer at all times, either in a container or a zip lock bag.

Stovetop Cinnamon Apples

  1. Chop all apples into cube-sized pieces, and put in a medium-sized bowl.

  2. Place apple pieces into a skillet on medium heat and pour 2 Tbs water on top. Cover the skillet for about five minutes and stir a few times. You want the apples to soften at this point.

  3. Add 1 Tbs coconut oil to the mixture on the stove. Make sure all of the apples are coated in the oil and cook for five more minutes while stirring occasionally. Again, you want the apples to continue to soften.

  4. Add maple syrup, vanilla, salt, and cinnamon to the skillet. Keep stirring, until all ingredients are well combined and the apples are coated.

  5. Let the apples cook for about five more minutes, while making sure to stir occasionally. Once your apples have reached a desirable consistency (however soft you want), remove from the heat and enjoy!

No-Bake Energy Balls

  1. Mix all ingredients together in a large bowl.

  2. Once well-combined, begin to roll into palm-sized balls (similar to the size you would make with raw cookie dough), and lay each on a lined baking sheet.

  3. Place the lined baking sheet into the freezer and watch the energy balls until they are hard (not falling apart).

These simple dessert recipes are inspired by ideas that I found scrolling through Pinterest, yet was quickly able to master them during quarantine. The best part is that they should not even require an extra trip to the grocery store! With limited supplies in your dorm room/apartment, any of these are sure to satisfy that late-night sweet craving while also eating clean and healthy. Choose a recipe, get cooking, and enjoy!
