Preheat the oven to 350°F and line two cookies sheets with parchment paper.
Combine flour, baking soda, cornstarch, and salt in a bowl.
In a separate bowl, completely whisk together the melted butter, vanilla extract, brown sugar, egg, and cinnamon.
Fold in the wet ingredients with the dry ingredients and continue mixing until a dough ball forms.
Cover the mixing bowl with plastic wrap and chill the dough in the refrigerator for at least one hour.
