  1. Preheat the oven to 350°F and line two cookies sheets with parchment paper.

    Combine flour, baking soda, cornstarch, and salt in a bowl.

    In a separate bowl, completely whisk together the melted butter, vanilla extract, brown sugar, egg, and cinnamon.

    Fold in the wet ingredients with the dry ingredients and continue mixing until a dough ball forms.

  5. Cover the mixing bowl with plastic wrap and chill the dough in the refrigerator for at least one hour.

    While the dough is chilling, combine the instant espresso powder, granulated sugar, and brown sugar in a small mixing bowl to prep for rolling.

    After chilling the dough, roll it into balls and roll them in the espresso powder mixture before placing them on the cookie sheet.

    Remove the cookies from the oven, and transfer onto a wire cooling rack. Enjoy!
