Rosemary Sweet Potato Tater Tots Are a Healthy Alternative to a Childhood Favorite

Tater tots—a greasy, crispy, guilty pleasure food that brings me back to my childhood when I would look forward to having a side of tots from the cafeteria. Unfortunately, we won’t be seeing tater tots on any superfoods list in the future, but lucky for us sweet potatoes are full of nutrients and health benefits.

As a big fan of everything in tot form, I went on a quest to find a version of tater tots that were ~all natural~. These rosemary tater tots are light and healthy, but they still satisfy tot cravings. Serve ’em up.

Rosemary Sweet Potato Tater Tots

  1. First, preheat your oven to 450°F and line a baking sheet with parchment paper.

  2. Next, bring water to boil in a medium sized pot. Peel the sweet potatoes and cook for about 12-15 minutes (they should be soft, but still slightly firm). Drain and cool.

  3. Once they are cool enough to handle, grate them on a box grater. Season with salt.

  4. Form the potatoes into u0022totsu0022 about 1 inch in size.

  5. Place the tots on a lined baking sheet and drizzle with olive oil. Stick the in the oven for 30 minutes, turning them half way through cooking.

  6. Sprinkle your tots with fresh rosemary and sea salt. Be prepared for your world to be rocked.
